It’s Taco Tuesday, and you are in need of a delicious salsa recipe. Well, look no further! This one will knock your socks off. Who doesn’t love a good salsa? After trying so many store-bought salsas with them each falling flat, I started to make my own. This recipe is so easy and will leave your taste buds screaming for more. It’s fresh, healthy, and vegan. It is also, keto friendly just don’t get too carried away. I warn you because once you start, it will take a lot of self-control to stop 😉
Before you get started, I want to give you some tips on how to handle jalapeños. I can’t tell you how many times my skin has felt like it was on fire and sometimes my eyes (because I’m the genius that will touch her eyes right after getting it on her skin) after messing with jalapeños. I’m telling you once you touch those seeds or inner membrane it’s all downhill. All thought and reasoning seem to go out the window. Ok, I’m being melodramatic here, but you do have to be very careful. I always try to handle the jalapeños by touching only the outside. I’ve also worn latex gloves before. But I found this nifty little trick. Check it out here. If you manage to get it on your skin here are some ways to wash it off and for crying out loud don’t touch your eyes.
I love colorful measuring spoons and cups not just because they are appealing to the eye but because they are easier to find when rummaging through your kitchen drawers.
I love a good ceramic knife, and this is the one I always reach for.
If you haven’t invested in a food processor make it a priority. I can’t live without mine. It makes chopping just about anything so much easier.
Remove the seeds and membrane of the jalapeño and roughly chop
Cut tomatoes and onion into chunks
Place onion, garlic, jalapeño, cilantro, salt and lime juice into a food processor
Pulse until finely chopped
Add tomatoes
Pulse until you achieve your desired texture
