This past weekend I shared what we were having for dinner on Instagram stories. I made ghormeh sabzi in the instant pot, and so many people went crazy over it and were requesting a recipe. I mentioned in stories how I was scared to share how I make my ghormeh sabzi for fear of being banished from the Persian community. Lol! You guys, I make my ghormeh sabzi with dried herbs. Please don’t shoot me. I mean, it’s got to be a thing if they sell the dried herb mix for ghormeh sabzi, right!? So here I am sacrificing myself with an instant pot ghormeh sabzi recipe with dried herbs.
It should be noted that traditional ghormeh sabzi is made with fresh herbs, parsley, scallions, cilantro, and fenugreek. I have never in all my life used fresh herbs. Unlike dried herbs with fresh herbs, you have to trim, wash, chop (by hand), and then fry all those herbs. Clearly, I’m not interested in spending my time doing all that when there is a quicker way, and to me, it tastes just as good. Moreover, my husband says it tastes better and what the hubby and kiddos enjoy is what goes.
One day I decided to give it a go in the instant pot, and woohoo, it came out perfectly. Undoubtedly saving me even more time! If you’re ready to join the dark side and give dried herbs a go, you can find the recipe below. Now, if you insist on using fresh herbs, I don’t see why you couldn’t prep and fry your herbs separately and add them to the instant pot and cut your cooking time in half.
What You Need
First and foremost, there are a few ingredients that you’ll only be able to find in Middle Eastern specialty stores. If you don’t have one locally, I was able to find them online. I’ve linked them above. Also, ghormeh sabzi is best served over a bed of long-grain rice. You can find a how-to make Persian rice video here on the site as well.
In typical Noosha fashion, I don’t own an actual Instant Pot. I seem to always go against the norm. Such a rebel I am, lol! Anyway, this is the one I use, and I love it! All you need is an electric pressure cooker. It doesn’t matter which brand.
3wholedried persian limes(sub ¼ cup fresh lime juice)
4cupswater
Instructions
Set Instant Pot to saute
Heat oil
Add onions and saute until golden brown
Add meat and brown
Add salt, black pepper, and turmeric
Saute for about 2 minutes
Stir in dried ghormeh sabzi herb mix
Add red kidney beans and dried limes
Add water and stir
Cover and set Instant Pot on high for 1 hour
Quick release pressure
Serve over a long grain rice

Dried ghormeh sabzi herb mix,dried Persian limes, and turmeric can be found at local Middle Eastern specialty stores. If you don't have a Middle Eastern specialty store close by these items can also be found online.
Whew! What a week it has been! Anyone else? The week started horribly, and we couldn’t seem to reel it back in. Consequently, I’m looking forward to some quality family time this weekend to hopefully reconnect with my boys and start fresh next week, the final week before winter break.
