Khoresh Bademjan | Persian Eggplant Stew

This post contains commissionable links.

Hello hello! In today’s post, you’ll find a step by step video on how we make Khoresh Bademjan, a Persian eggplant stew, in our household. Khoresh Bademjan is my husband’s favorite of all the Persian stews. Our boys also enjoy it, and as I perfect my recipe, it is slowly giving my love, Ghormeh Sabzi, a herb stew, a run for its money.

Several weeks ago, I shared some slides on Instagram stories where I was frying up my eggplant for Khoresh Bademjan, and I had so many requests for cooking videos. I’m no chef and just fly by the seat of my pants when cooking, but here you go. I’m sure there will be some avid Persian cooks that will cringe watching this, but oh well, this is how we do it, and we love it! There is a Persian saying that goes, khali sakht nagir, which translates to take is easy. That’s our motto when it comes to cooking. Lol!

Khoresh Bademjan pairs wonderfully with long grain rice. Lucky for you, I have a video on how to make Persian Rice as well. That video will also show you how to make the perfect crispy tortilla tahdig. What Persian dish should I feature next? Let me know in the comments below!

As always, thank you so much for stopping by, and I hope you found this how-to cook Khoresh Bademjan video helpful! 😘 If you try your hand at making this delicious Persian eggplant stew, I would love to see it!
