Quick & Easy Tabouli Salad

I will never forget the first time I tried the classic middle eastern salad, tabouli. Ok someone please let me know in the comments below, is it tabouli or tabouleh? I’ve seen it spelled both ways. Anyway, the first time I tried this salad I was probably in my early teen years. We were at my aunt’s house for a party, and one of her friends made this salad. I loved it so much my mother asked her for the recipe, and the rest is history. It’s comfort food for me. I always liked to eat it with tortilla chips, but recently I’ll eat it out of the bowl with a spoon. Mmmmm so good!

I’ve had my Cuisinart food processor for almost 15 years now. I’m pretty sure it was a wedding gift but legit it’s the best investment ever. It makes chopping herbs so much easier.

I’m going to admit I got on the electric kettle train way too late in life. If you don’t own one get one, it’s a game changer.

These measuring cups I love because you can see the amounts from up top. No more having to bend down to make sure you have the right amount.

Last the colorful measuring spoons are my favorite because I don’t know about you but my measuring spoons never end up back on their ring but rather get thrown into a drawer, and when they’re each a different color it makes it easier to find.

Quick & Easy Tabouli

Ingredients

  • 1/2 cup Bulgur #2 Medium
  • 1 cup Boiling Water
  • 2 bunches Curly Leaf Parsley
  • 1 small Yellow Onion
  • 4 large Roma Tomatoes
  • 1/2 cup Olive Oil
  • 1/2 cup Lemon Juice
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder

Instructions

  1. Place bulgur in a small bowl and cover with boiling water and let soak while prepping vegetables

  2. Trim leaves off parsley, discard stems, wash and dry thoroughly

  3. Chop or use the pulse feature on your food processor to finely chop the parsley

  4. Chop onions and tomatoes

  5. Drain bulgur and squeeze out any extra water

  6. Place all ingredients into a bowl and add olive oil, lemon juice, salt, pepper and garlic powder

  7. Mix until all ingredients are combined

  8. Enjoy on its own, with chips, or with pita bread and hummus

You might be asking yourself what in the world is bulgur. It is made from preboiled groats usually from durum wheat and is often mistaken for cracked wheat. It is a common ingredient in Middle Eastern cooking.

Bulgur is low in fat, high in minerals like manganese, magnesium, and iron, and is an excellent source of plant-based protein. It’s much better for you than refined carbohydrates. You can find bulgur at your local middle eastern markets or even online.

If you have a hard time finding bulgur you may try using quinoa instead. I’ve never tried it but if you have or do let me know in the comments below how it turns out.
