Quick & Easy Tabouli

Ingredients

  • 1/2 cup Bulgur #2 Medium
  • 1 cup Boiling Water
  • 2 bunches Curly Leaf Parsley
  • 1 small Yellow Onion
  • 4 large Roma Tomatoes
  • 1/2 cup Olive Oil
  • 1/2 cup Lemon Juice
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder

Instructions

  1. Place bulgur in a small bowl and cover with boiling water and let soak while prepping vegetables

  2. Trim leaves off parsley, discard stems, wash and dry thoroughly

  3. Chop or use the pulse feature on your food processor to finely chop the parsley

  4. Chop onions and tomatoes

  5. Drain bulgur and squeeze out any extra water

  6. Place all ingredients into a bowl and add olive oil, lemon juice, salt, pepper and garlic powder

  7. Mix until all ingredients are combined

  8. Enjoy on its own, with chips, or with pita bread and hummus
