Heat olive oil in a large pot
Add onions and saute until golden
Add garlic, bell pepper, leek, zucchini, carrot, baby spinach, and cook until veggies are softened
Stir in dried parsley, dried oregano, dried basil, and Tuscan Garlic seasoning
Add tomato paste, stir, and cook for a couple of minutes
Add petite diced tomatoes and low sodium chicken broth
Stir to combine
Bring to a boil then reduce heat to low, cover, and let simmer for at least 30 minutes
With an immersion blender, blend until smooth
Serve over your favorite pasta
