Lemon Garlic Orzo

Ingredients

  • 1 lemon
  • 1 cup orzo
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp finely chopped red onion
  • 1 tsp prepared minced garlic
  • salt and pepper to taste

Instructions

  1. Peel half of the lemon avoiding the bitter white pith

  2. Thinly slice peel

  3. Cook orzo according to package directions and add lemon peel to the pot at the same time as the orzo

  4. Drain and add olive oil, lemon juice, red onion, and jarred garlic

  5. Season with salt and pepper

  6. Stir to combine

Recipe Notes

If you don't have jarred garlic on hand. Use 2 cloves of fresh garlic and sauté in a little bit of butter until golden.

Can also be served chilled
